In this workshop, you will learn how to ferment fireweed and raspberry leaves into a green tea with a developed flavour and a rounded character. The workshop is hands-on and focused on the full process, from fresh leaves to a fermentation you start during the session.

We work with the plants themselves and explore their character and differences. We also touch on the nutritional properties and traditional uses of fireweed and raspberry leaves. You gain a practical understanding of fermentation and how it shapes flavour, texture, and overall character, with an emphasis on tasting and sensory awareness.

All materials are included. I provide all fresh leaves, and each participant starts their own fermentation during the workshop and takes it home to finish, along with the knowledge needed to complete the process independently.

The workshop includes homemade seasonal fika made with wild edible plants, as well as a tasting of finished fermented tea.
